Piggies in a Bacon Blanket

 What do you do when you're a hungry low carber who keeps bacon, cheddar and 
good quality hot dogs in the freezer?  

You pull out your ingredients and make these Bacon Wrapped Cheddar Hot Dogs!  
Because everything is better with bacon!   
And I do mean EVERYTHING! 
I'd seen the video making the rounds on facebook so I had to try them!  The dogs/cheddar/bacon combo alone are pretty salty alone so serving them on a double bed of helps balnce the salt out.

I make sure to purchase the highest quality hot dogs with the lowest carb amount per dog.  Most have added sugar (up to 3 carbs per serving) and some have 1 carb per serving.  

They're easy peasy to make.
Cut lengthwise slits in your hot dogs and stuff it with slices of american or your favorite (make sure it's real) ccheese.  Wrap one piece of bacon around your hot dog and place on foil covered pan.  If you like you can hold the bacon in place with toothpicks but mine came out great since I stretch the bacon so it holds well.   

Bake at 400 degrees until bacon is nice and crispy. 

These would be great for a bbq or traveling.

Flax Seed Wrap Grilled Cheese

It's been nearly a year since I've been grain free and low carb (I've also lost 40 pounds simply by changing my diet~  super exciting!)  

It's also been about a year since I've had a wonderful grilled cheese sandwich. 
So this week I had the brain child to make one with the flax seed recipe that I have shared previously.  


Real butter.  Colby Cheese.  And a flax seed wrap.  Pretty good stuff if I do say so myself!

Flax Seed Crackers


If you're grain free and want a chippy kind of a snack these are great with guacamole or with some cheese slices on top.

So... without furthur adieu~     

1 cup ground flax seed  
2 eggs 
1 Tbsp Olive Oil
Italian Seasoning (or whatever you like) 
Sea Salt from grinder 
Parmesan Cheese (dry)

Mix flax seed and eggs together.  Sprinkle in some Italian Seasoning and salt.  Let sit for about five minutes.

Place parchment paper in bottom of cookie sheet.  Spread dough on top of parchment paper.  Cover with another sheet of parchment paper and roll as thin as possible.  They won't look perfect and that's okay.  I cut mine with a knife so they would be easier to break apart after baking.

Pull off top parchment and give another good sprinkling with salt, parmesan cheese and Italian Seasoning.  Press spices/seasonings down into dough with your hand or parchment paper.

Bake at 350* for 10 minutes.  Flip and bake other side for an additional ten minutes.  Cook for additional time if you desire more crispiness.

Breakfast on the Go: Cheesy Sausage Veggie Egg Bites

We had some yard work to do this week and the last place I wanted to be was in the kitchen cooking (and cleaning up!) breakfast while thinking about all the other stuff that should be getting done. I found a muffin pan omelette recipe over at 
 Just a Pinch to use as a springboard. 
These can be refrigerated very well.  I put them in the microwave for about 1 minute until the cheese was melted and they were very good~  not rubbery at all.  They're awesome for a trip on the road or for a quick breakfast when you've got to be on the go.


Cheesy Sausage Vegetable Egg Bites

You'll need a muffin tin for this recipe so spray each muffin tin
 with non stick spray and set aside for now. 
Also preheat the oven to 350 degrees.

9 eggs scrambled 
1/4 cup cream 
a few grinds of salt and pepper
chopped mushrooms 
Grated cheese (I used muenster which melts great) 
Cooked Sausage (drained well)  
chopped green onion

Scramble eggs, cream salt and pepper together and set aside.  
Place equal amounts of mushrooms, shredded cheese and cooked sausage in each muffin tin.  Pour scrambled egg mixture equally in muffin tins.  
Bake for 15 minutes or until eggs are set in center.  
Remove from oven and top with grated cheese.  
Return to oven until cheese is melted just for a very short time.
