If you're trying to cut carbs I've got a great recipe for you! I had never tried spaghetti squash until very recently and love it. It's a great substitution for high carb pasta and a great way to get in your veggie intake. It tastes great.
The night before I assembled my meatballs in a plastic bag and kept them in the refrigerator till I assembled everything to go in the crockpot.
These are a basic meatball recipe that I tweaked to go low carb~
1 pound ground beef
1/4 of a chopped onion
1/2 cup almond flour
1 egg
1/4 cup of whole whipping cream
A liberal sprinkling of Parmesan Cheese
Italian Seasoning
Seasoning of your choice
Combine above ingredients and store in refrigerator till ready to assemble in the morning.
1 Spaghetti Squash
1/2 cup to 1 cup low sugar spaghetti sauce
Italian Seasoning
Spray your crockpot with non stick spray.
Wash the outside of your spaghetti squash and cut it in wedges so it fits nicely.
Roll up your meatballs and place in and around the squash.
Cook on High for about 3 hours or Low for 5-6. It cooks rather quickly.
Take out spaghetti squash and scrape out on plate to substitute for your pasta. Spoon some spaghetti sauce and meat balls over the top and sprinkle with parmesan cheese.
