Flaxseed Wraps

Every so often I want to jump up and down in excitement and thank fellow bloggers, online recipe originators and low carbers for the wonderful work they do in sharing.  It is incredibly awesome!  I belive in giving credit where credit is due, and I believe this recipe originated in the book Wheat Belly.  I found it over at Spark People.  
The ingredients are minimal and there is no need to turn on your oven since these are cooked in the microwave.  They are quick to make, dense, heavy, and hold up to the folding of a wrap.  
For those that are cutting carbs it's absolutely great! 
3 Tbsp flaxseed 
1/4 tsp baking powder 
1 Tbsp Coconut Oil 
1 egg 
1 Tbsp water
Salt and Pepper Grinder
(Pam spray or oil) 
Mix together, flaxseed and baking powder in bowl, mixing till baking powder is well distributed.  In seperate bowl mix together coconut oil, egg and water.  Add wet ingredients to dry and stir together with a whisk.  (If you don't mix it well enough you'll get some eggy spots as you can see)  
Grease a regular dinner plate with Pam spray and spread batter on plate.  
Microwave for 2 minutes and check doneness in center.  Microwave as needed till done.

Worship Wednesday~ Psalm 23 with Shane and Shane

Have you heard  Shane and Shane's new Psalms 2 Album?   
I've just downloaded it from Itunes and am really loving it.  
 It's wonderful for contemplative worship and I love that it is inspired by various Psalms in the Bible. 
I love how our relationship to the Lord is compared to that of a Shepherd and His sheep who commit full trust and reliance on the One who is watching for their safety. Psalm 23 (both the scripture coupled with the song) have really been ministering to me lately and I've wanted to share it on the blog for quite a few days now.  The Shane's music has ministered to me in so many ways over the years and I am truly grateful for their music ministry.

Low Carb Chili

With the leaves turning color and the colder weather upon us, it's the perfect time to make a big pot of chili!  
This recipe came from a super guy, Michael,
 who straight talked me into controlling my diabetes by diet and gave me the tools to make it happen.  
I'm grateful for his inspiration and advice! 
 I've tweaked it a bit by adding olives in place of the traditional beans used in chili.  
Even my carbivore husband loved this!  
It's going on my menu for next week.  Again!  
Low Carb  Chili

2 lbs ground beef

10 green onion stalks, choped
2 cloves garlic, minced
5 teaspoons chili powder
3 teaspoons cumin
1 teaspoon cayenne
1 teaspoon paprika
2 teaspoons salt
8 oz can of no-sugar added tomato sauce
4 tomato sauce cans water
2 cans black olives, drained and cut them in half

Brown ground beef, onion, and garlic in a large pot. Drain well.
Add chili powder, cumin, cayenne, paprika, salt, tomato sauce, black olives and 2 cups of water.
Bring to a boil then turn the heat down to a low simmer
Cover and simmer.  Since we aren't using any flour for a thickener, we're relying on the liquids reducing and thickening naturally.  When your chili starts getting a bit dry add the third cup of water and simmer that down.  You'll want to simmer, add and reduce until you've used your 4 cups of liquid and the chili is your desired.  I simmered for a few hours.

Per Serving:
5g carbs, 18g fat, 25g protein, 283 calories
Your macros will vary according to ingredients used.
Note: I had to add quite a bit more seasonings for my taste buds. 
I also added quite a few whole peppercorns.
  
My secret ingredient was adding 2 chipotle peppers (canned at 1 carb each) 
to give it a smoky flavor.
These little gems are SOOOO good!

Rasberry Hot Breakfast Cereal~ Low Carb and Grain Free

Remember those sweet little packets of Oatmeal that were so handy and good?  This rivals those!
I was trying to convert an ordinary muffin recipe to Low Carb and made a mistake... and this was the result.
The fact that it is grain free and won't spike your blood sugar is another reason you have to give this as shot.

1 Tbsp Butter
4 Tbsp Almond Flour
2 Tbsp Heavy Whipping Cream
2 Tbsp Water
2 Fresh Rasberries, cut in small pieces

Place butter in your mug and heat in microwave till barely melted.  
Add almond flour, heavy whipping cream water and raspberries.
Heat in microwave till bubbly. 
Add sweetener of your choice.  
You can reduce water to 1 Tbsp if you prefer a thicker cereal.

Worship Wednesday~ Jesus, Son of God~ Chris Tomlin

Do you ever just wonder how God can love you?  
With the multitude of sin that beset me,  God's love was so merciful to me, his love boundless to me,  
His wonderful power reached out to me and He keeps me in His wonderful love!
  God's grace is truly AMAZING! 
It's only expected that His name is the ONLY name that should receive Praise and Honor!
Why does God want us to worship Him?  
So that He becomes LARGER and we become smaller! 

I will praise thee,  O Lod my god,  with all my heart: and I will glorify they name for evermore.   ~Psalm 86:12

I woke up with this song in my head this morning and it's my reasonable service to sing these words back to the One 
who bestowed on me everything that is good in my life.  
It's my desire to walk intentionally with Him and to put Him first in all that I do.  
From the smallest things to the very large I want to invite Him in to every process throughout my day.

Crown Point Antique Shops~ A Connection to the Past

I recently took some dear friends to Crown Point to browse around and go antique window shopping.  Downtown Crown Point is home to a wonderful little community with a vintage feel.  

I love antiques and walking through the many stores is like walking through time and seeing all of the wonderful little knick knacks and goodies that once held a special place in the heart of the owner. 
Since I've been a kid,  I've always loved antiques.  
They give a sense of connection to the past.   
As much as these fancies tell a story, they also leave much of the story untold.  
I can't help but wonder who it is that owned these wonderful little treasures!  

Where could these have been worn?  A dinner party?  A ball?  A night at the Opera?
I wonder where this little gal sat in a house and if she was once a special gift.
This sweet girl in pink is one of my favorites from the day.
This hatbox is faux~vintage but still adorable nonetheless.

From Europe?  Perhaps these Delft knick nacks were hand carried over from Europe?  
If you're like me,  
you can't help but wonder about the stories they could tell!  
If only they could talk!

Plan with me- September 2015 Monthly Overview

I most recently was able to make a trip to Daiso in Seattle and was able to pick up a few goodies.  I purchased the blue pencil case and punched some holes in it to hold my pens/markers for easy access.  
 I made a request at a planning group for this cover and a very kind lady named Gillian was sweet enough to RAOK this to me.  I can't tell you how this made my day!  I love my new planner cover.  It's bright,  it's floral and it totally sums up how I want to enjoy every second I have on this earth!  I'm grateful for this lovely gift!
 Instead of leaving my monthly overview's blank,
I've been trying to decorate and embellish them to pretty them up.
My overview started out with this chipboard/sticker as inspiration.  
What are beautiful things in my life worth being happy for?  

God's grace~  I can meditate on it daily and still be astounded after serving him for 28 years.  He has been so merciful to my husband and myself!  God is amazing!  

My husband~  He has been such a wonderful foundation in my life and an example of a faithful Christian man.  I am so grateful to have him in my life!

Mercy~  God's mercies are new every morning.  Unlimited grace like rain!  

Love that lasts~  We recently celebrated our 25th wedding anniverary and we were able to replace my wedding ring that was stolen.  Someone recently complimented my new set and I told them it was my anniversary gift.  I also had told them how I couldn't believe that I had been married for over 25 years because, well,  I didn't feel that old!  It's so true!  We've been through so much together and I'm so happy to see we are still in love after all this time! 

The Hope of Heaven~  What else can be said?  Through God's grace and mercy I have the wonderful hope of Heaven!

Healing~  My dear hubby had three brain aneurysms, one of which hemmoraghed in March of 2012.  Looking at him you would never believe it.  At all.  We most recently had his follow up appointment and he doesn't need to see his neurologist for another 5 years.  How amazing is that?  God's healing power has been so real in our lives!

A Night with Hillsong United in Chicago, Illinois


I had a wonderful night very recently in Chicago with Hillsong United.
I had seen them in Korea a few years back so seeing them again was really a wonderful way to spend the evening in worship.  

Of course I had to bring my camera and get a few good shots.  :)

It was so awesome singing  "This I believe" with them.  
So many hands were lifted in worship.
One of my favorite songs of all is "Forever Reign" and I'm so glad they sang it!

Super Yummy Dreamsicle Floats!

Orange and Cream. 
Could there be a better combination?
I think not!  
And when you know how easy it is, you'll wonder why you didn't think of it.
I know~  because I wondered the very same thing!
Enter Diet Sunkist and Heavy Whipping Cream! 
The perfect pair!
Simply fill up your glass with some Orange Sunkist (or Crush) and 
add a Tablespoon or two of Heavy Whipping Cream
Give it a stir... and Voila... you have a wonderful dreamsicle float!  
This is perfect for Autumn or a wonderful Hot Weather Treat!
